The UW Meat Science and Muscle Biology Laboratory is a state-inspected meat processing facility, part of the Department of Animal Sciences, that performs research, instructional, and extension programming. This position was created from a grant from the Wisconsin Department of Agriculture to develop a Center of Excellence in Meat Processing. This position will participate in the development of a unique 2.5 year meat processing training program leading to a Master Meat Crafter certification. The initial year of this project is almost completed. This has been a very successful program.

This position will be responsible for providing assistance for Meat Science Extension programming needs and will be specifically involved with oversight and support of extension short courses, workshops, seminars, and other activities. The majority focus of this position will focus on providing assistance in development and programming oversight for all aspects of an unique two and one-half year meat processing training program. Involvement and support with other extension activities as determined appropriate. Outreach specialist will be expected to assist with organizing and coordinating multiple workshops held throughout the year and provide program needs for those workshops. This position is expected to organize and implement all components of workshops such as hotel arrangements (i.e. receptions, meals, rooms, etc.), speaker coordination (i.e. workshop contacts, travel arrangements, UW travel coordination), meat laboratory coordination (i.e. procurement of product, classroom and demonstration logistics), and all miscellaneous activities and needs associated with the program. The outreach specialist will be expected to provide one-on-one support, as needed and required, to participants enrolled in the program. The outreach specialist will be expected to provide continued and unparalleled assistance to ensure high caliber and successful programs are being administered on an ongoing basis. An important aspect is this position is to work with University personnel to insure that all purchasing and account maintenance is performed under strict University and State accounting and purchasing principles and policies.

30% Work collaboratively with the faculty to plan, develop, coordinate, and deliver workshop training for the Center of Excellence at the Wisconsin Department of Agriculture.

30% Create training materials that are customized to meet the outreach program needs.

10% Procure raw materials and instructional space and logistics for instructional purposes with an understanding of meat products and requirements for the manufacturing process.
